
Chocolate Cabernet Sauvignon Cupcake with Blackberry Frosting – The cake is moist and delicate with a deep chocolate flavor. The berry undertones of the wine are highlighted in the cake and frosting. The cupcake is vegan, but you’d never know it.
This is my entry for the January 2009 IronCupcake challenge. The secret ingredient is wine and I decided to use a Pine & Post 2005 Cabernet Sauvignon. There’s no specific reason other than we had a bottle that was half open and I thought the flavors would go well with chocolate.
I also tried making a chocolate cupcake with an orange muskat, but the orange couldn’t stand up to the chocolate. The cabernet sauvignon worked wonderfully and really deepened the chocolate flavors.

After gathering all of the (vegan) ingredients together, I mixed the wet and then sifted in the dry.

After a good blend with my mighty hand mixer, I measured 1/4 cup into each slot.

Then into the oven to bake!

I have to say, I think they are pretty delicious.
